I make this banana cake a lot. It’s a totally mixed recipe, partly my Grandmothers, partly Southern Living and partly came about because of a mistake I made one time, leaving an ingredient out, and it worked well, made it better really, so I kept making it the “new” way every time after that…….Click here to read the rest of this post at my new blog address

I love your blog and your food philosophy! Will definitely be visiting regularly. Also – I just ran across a banana cake/bread on David Leibovitz’s site and he also espoused the awesomeness of the banana/coffee combination. He added a shot of espresso to his. This makes two banana/coffee sightings in one week…I have no choice but to make one! (Luckily I have lots of ripe bananas…)

Yes, no butter!! It’s incredible really. The recipe can use 1/3 cup of vegetable/olive oil if desired and it will work just as well. There is something about the whippped banana and the natural oils in it that make the cake work just as well without it. Actually it’s a mystery to me – but I just go with it!!!
